Southwest Chicken Skillet
Serves 4-6
Prep Time: 20 minutes
Cooke Time: 50 minutes
Ingredients:
- 1 cup uncooked long grain white rice
- 1 cup salsa
- 2 cups precooked chicken
- 1 (15oz) can of black beans
- 1 TBSP of chili powder
- 2 cups of chicken broth
- 1 1/2 cups of shredded cheese
- 2-3 green onions, sliced for garnish.
Instructions:
- precook your chicken with seasoning to your liking
- In skillet combine precooked chicken, salsa, rice, chili powder, and chicken broth
- Stir until mixed evenly
- Cover and turn on high heat until rolling boil has occurred
- Immediately turn down to low, stir and recover for 30 minutes
- After 30 minutes, turn off heat and fluff with fork
- Add shredded cheese to the top and place lid back on and wait 3 minutes or until cheese is melted.
- Serve with green onions on top.
This was a big hit in our house. So yummy and budget friendly!
